I would say get a bigger UTH but your temp is good. Using straight eco earth is fine and I personally use just it as my substrate since it holds moisture easier. Lol yeah they do that a lot, it used to freak me out when I first saw it. So far I've witnessed mine doing it to clean out their shells, groom their back legs, shove stuff in their shells, and modify the inside of their shells.

Using straight coconut fiber (eco earth) is an easy way to help maintain humidity levels. A long time ago I saw suggestions on here to use salt water with the substrate to inhibit mold growth and it has worked really well for me. Depending on your substrate he could be eating it. I have pure coconut fiber made with salt water and I find my crabs chowing down on it all the time. I've also found them eating the sides of their coconut hut and the wet end of the attached rope ladder.
As long as he is active, he's eating something.
