Mold is not harmful (to the crabs at least) and doesn't usually smell, so that's not your problem. I wouldn't worry. Crabs are nocturnal and may just not be as active during the day. If you are really concerned try this trick: At around 11 or 12 (at night) walk into the room and turn on the light. I like a mix or just ee. I find just sand drys to quick which can cause tunnels to collapse.

The biggest issues that I can see with your tank is that you need a source of calcium for the crabs (egg shells, cuttlebone, ect.) and the substrate needs to be a least 6" at the lowest point.
