Sometimes crabs hide really deep in shells. You might want to check them again. I would recommend to get a water conditioner for tap or spring water called prime or aqueon tap water solution, and instant ocean salt for saltwater. My crab Peach does that where you can only see part of their legs and they stay like that for a while. I think it is sleeping because she mostly does it in the day and sometimes at night.

Either one can be accurate if you calibrate it

Sure. I haven’t experienced this before, but it seems like you are doing everything pretty good. You might want to put the crab right side up though in case it can’t do it itself.
