AussieJJ and MotorCrab know a LOT about pools and related details. If you search some of their posts, you may find what you are looking for.

pH will vary with where you are at in the world. It's not worth messing with and it isn't super important to aim for a certain reading. Freshwater will vary from around 6.5 to 8.5, with 7 being neutral. Oceans sit around 8.2 to 8.4, and Instant Ocean will also duplicate that for the most part without any extra work.
Ammonia should be 0ppm
Nitrites should be 0ppm
Nitrates are pretty safe and can spike to over 40ppm without trouble, but lower is better.
