HCA: Hermit Crab Association

I've had my bamboo plant for a few years now and it was leaning so I chopped a big piece off and put it in the tank.

Bamboo... could I put the leaves from a plant that needs to be trimmed in there or do they need the whole plant?The veggies - does it matter if they are cooked/raw?
