Update: Both crabs are alive and well. So I did dig, just until I found them, and then gently recovered them. Thanks all, that's what I thought but wanted to make sure. Our consistency seems about right, and the crabs seem to be digging and enjoying themselves.

Reading over the guides on these forums, the substrate should be kept moist so it's sandcastle consistency. When we setup the tank, we mixed sand and fiber with water, until it was sandcastle-like.
