Hot glue is not toxic, but it falls apart really fast. I made a ladder using sticks and hot glue, and it fell apart in days.

Something I would suggest (that I don't have yet, but am planning on getting soon) is a bubbler for your water pools. With water pools that big you can get bubblers. You will need an air pump, airline tubing, T-valve (to split the tubing) and air stones! Not a must have, but it is good for crab heal...

I have done this previously for my crab tank.
It is a great and affordable second level. Just make sure you have it secured in place very well. I used dollar store suction cups, but you could also use zip-ties or other crab safe products.

I have left my crabs many times for a week or so. I leave lots of dried food, it will be moldy when you get back but that's okay it won't harm them. Be sure you have large enough water pools, and that they won't tip over. Nothing you can do to change the heat and humidity while you are away - hopef...

Please do not dig up your crabs, unless there is an emergency such as a flood or bacterial bloom. Doing so can cause a lot of problems. Yes, you could have caused her to lose a leg, but could also have been from previous stressors. Was the leg there with her? If you do dig up a crab, don't re-cover...
