That's a little tricky. I measure the opening of their current shell and estimate the fit. Is their current shell too big, just right or too small? Do you know what they are using? There are many different chemicals, but most are pretty specific to mosquitos or only work in water on the larvae. They also tend to break down fairly quickly. The main thing I look for when buying used it to have clear, not stained seals. If they are stained blue or green that means someone at some point has used methylene blue or malachite green in the tanks. That's totally over-thinking it. I wouldn't put fridge-temp water in, but room temp is fine. It will adjust to the temp of the tank fast enought, without causing any problems for the crabs.
