Fluker's is the only brand of hermit crab sand that is considered safe. It's totally fine to use straight out of the bag, but you can add some EE if you have it and want to use it. I have seeds, worm castings, and calcium sources that stay in my tank 24/7, so a typical meal is a protein and a fruit/veggie/foraging item.

When I'm rearranging, I always take the crabs out. This is because I usually take every single item out and rotate the substrate before putting things back in. (I only do this when none are buried/molting.) I feel that they would feel exposed if I left them in while I was taking literally everything...

Maybe I'm in the minority, but I don't wash/rinse my crab water dishes regularly, only if they stink. (They had dragged food in there and it was decomposing. I had to fill the whole thing with baking soda and hot water to get rid of the smell.) I just dump them and refill.
