I was thinking about making two hermit crab pools for my hermits. One saltwater and one freshwater. I was wondering do they like pools or??

Definitely! You want to make them deep enough for them to fully submerge in, and safe enough for them to get out of. 
A lot of us use tupperware containers, and we double them up so when we change the water we don't disturb any molters down below
