Should I be using a dechlorinator for distilled water?
I don't think that I need to.
Distilled water doesn't have any minerals right?

Distilled water should be nothing but purified H20, but unless it's run through a carbon filter before distillation it can still contain traces of chlorine.

It has no minerals. That makes it perfect for mixing up saltwater as then it will match seawater perfectly. For freshwater it's actually healthier to use dechlorinated tap water as land animals have adapted to getting certain minerals out of surface water. In reptiles, using only distilled water for drinking has led to health problems. Crabs aren't reptiles, but given that they're surrounded by a mineralized skin it's probably a good idea to make sure they're given what they are used to.
