Is it important to pay attention to the gravity when mixing instant ocean salt water? I've always just put in a half cup per gallon like the directions say but I'm curious if I've been messing it up

Mix according to directions. The specific gravity should be correct if you follow them. Make sure you dechlorinate the water as well Also, the specific gravity will only change if water evaporates. Then, you would just want to add fresh water to it until your water change.

For example - I change my water once a week. I add fresh water to my saltwater pools so the salinity doesn't become high. Salt doesn't evaporate. Hope that helps.

Is distilled water okay?

For the saltwater, yes, distilled is good. The salt replaces everything that is missing from the distillation process. Fresh should be regular spring or treated tap water.

The half a cup gets you really close to 1.024, which is the average sg of seawater. Since hermits are tidal and estuary dwelling it does not have to be exact like it would be for marine fish. A little more or less won't harm them, and since it's getting changed out regularly one off batch won't make a difference long term.
