I have some frozen Hoki fish fillets I wanted to fry up for my hermies dinner tonight. However, this is the first time I am using raw meat and I don't know which or if any oils that would be okay. I see avocado is on the safe list. Does this extend to oil, cause I have avocado and olive oil on hand. Is there a better way? Such as using dechlorinated water?

They can have olive oil, coconut oil, etc, but they certainly enjoy their fishes raw.

Yes, you certainly can!
You can also give them any of the above mentioned oils in a tiny dish
