I live in the midwest, and western grocery stores here are pretty lame in the meat department. Only muscle meat, everything neatly butchered and packaged. You’d be hard pressed to find salmon with the skin on it (the best part!!) here.

Fortunately Chicago has no shortage of international grocery stores whose customer base isn’t nearly as squeamish!

Most east asian cultures that live in the US hail from somewhere on the coast, so asian markets here have tons of seafood to choose from. All sorts of whole fish, crab, crawfish, and squid, all kinds of mollusks, tons of kinds of kelp. All sold by the pound, and it can be quite cheap to just get one squid, one fish, one shrimp etc. that will only cost you a few bucks but will feed your crabs for weeks.

Last week I got a whole pollock and chopped it into little cubes, then put them in a bag and tossed it in the freezer. Whenever it’s dinner time i just thaw out a portion.

The liver (i think its the liver) has been a huge hit so far! They don’t touch the meat much though.
