

Please keep in mind I am not a baker. I love baking but I'm usually following others' recipes, not coming up with my own, so please feel free to jump in with any suggestions if you think it could be improved.
CRUST:
Grind up some mealworms, flaxseed, and walnuts. Mix in just enough coconut oil to moisten, then press into the bottom of a lined muffin tin.
FILLING:
Whip together 1/2 cup pumpkin puree, 2 ounces of coconut milk ( milk not water!), and a little bit of molasses (I used about a tablespoon). Add in one gently beaten egg just until combined. Pour over crust and bake at 375F for about 20 minutes.
OPTIONAL:
If you're interested look up how to make whipped coconut milk, leaving out any sweeteners or flavorings of course, to top your pie with.
*Allow your pies to cool before carefully removing from the liner.

I had enough filling to do 3 large individual muffin tins. I left one crustless so I could try it (I'm so not interested in eating mealworms!). Very pumpkin-y and definitely not sweet enough for me but we'll see how the crabs (and mice!) like it.
