Food storage

I finally was able to move 100% away from pellets and think I'm getting the hang of the minerals/calcium, foraging dish, and protein. My question is this - how do I store most of my extra food for long term? One store was nice enough to let me know that the calcium/ minerals can just be room temp and freezing the other things will keep them fresh. So I plan to keep afew tablespoons of each food out in a little organizer then I can freeze the rest? (clover flowers, dandelion leaves, wings n things, basic diet, fruitcake, flax and other seeds/nuts)
Can/should I freeze worm casting? Ground popcorn mix? Green sand?
And I can leave out things like oyster and lobster shell and calcium/ mineral supplements in a cabinet?
