Only certain things will be able to be dried without a dehydrator. It's the same process as for human food, so a website that talks about drying food for human consumption will give you some idea.
If you have an oven that the setting can be low enough, there are things that could be dried that way - low heat for long time.
I dry things like flowers and leaves in a shallow box in the dash of my car on a hot day, doesn't take long at all.

When I dehydrate leaves, I set my oven to 250°F and bake the leaves for 30 mins. I crack open the oven door for 5 mins while they're baking to let out built up condensation. I put parchment paper on a baking sheet and place the leaves on top in an even layer, avoiding overlapping. They'll dry out faster if they're not piled on top of each other.

Used dehydrators aren't hard to come by either! Check with family to see if they have one collecting dust and taking up space somewhere. I got two of mine that way.

This is a good idea. I got mine from someone getting rid of their dehydrator on my neighborhood website. It was free and works great.
