I know fish and fish oil are safe but would dried fish skins, like they have for dog treats, be good for them? I’m not sure what nutrients they would get from it.

Yes, it would be safe so long as it's all natural. It would contain proteins, healthy fats, some vitamins - all good stuff, its just that humans don't tend to care for the taste and texture so we think of it as garbage. I imagine they descale it for use as dogs treats so it's less messy, but scales have keratin which can help exoskeleton growth.
