I have a 10 gallon tank with 3 crabs and I can never keep the humidity where it should be so I put sponges in the salt water and fresh water bowl but that doesn't keep the humidity, the only thing that I can tell works so far is if the turn my heat lamp off but if I do that it gets to cool in the tank. I don't know what to do I need help.

Okay so this can be tough since I don't know what you use as substrate but I can tell you what I do with my tank and maybe it will help or give you an idea. I use like 70 percent coco fiber and 30 percent sand, it's be beach one side then mixed together in the middle and more coco fiber on the other side. I use moss pits (reptile moss soaked then put in shower caddies). That helps the humidity as well, then I mist my tanks every 2 to 3 days. The misting just helps the sub from drying out and puts humidity in the air. I also have plexiglas glass that covers 80 percent of the screen lids, you can even use plastic wrap, that helps trap the humidity in the tank. A screen lid alone allows the moisture to go through the screen and dry out the tank. So if you can trap the moisture in with plexiglas glass, or the plastic wrap it will seal it in and keep humidity better. Don't turn off your heat source to raise humidity unless the heat doesn't drop to a dangerous or uncomfortable level for the crabs. Idk, my tank was established before I ever put crabs into it. I made sure I figured out how to keep the heat and humidity were I needed it and got the feel for it so I knew my crabitat would be stable enough for the crabs When I mist I just use a spray bottle set to a mist. Hopefully that helped a little.

My experience with 10gallon tanks and heat lamps is that they really knock out the humidity. I have similar questions as rainbow, what's your sub and how wet/dry is it? I use a 4:1 ratio of sterilized (baked) paysand and ecoearth that's at sandcastle consistency, you sub should be moist enough so that you could build little towers and dig small tunnels without it collapsing, since that's what the crabs need it for (tunnels, not towers aha). That tends to help with the humidity, and moss pits do as well same with coverings.
It might be better to get a uth and stick it on the back of your tank, since that doesn't kill humidity like lights do and will also supply nighttime heat.
