Upgrading Tank
I currently have a 10 gallon tank with one crab, 5 shells, 2 water bowls, and a food dish. The substrate is coconut fiber. I am looking to expand to a 15 or 20 gallon. How much work would it be to do that?

I don't think it would be a lot of work at all. Look on Craigslist, letgo, OfferUp or bookoo for a used one to get a great deal! Then hopefully you will need to just buy more substrate
Good luck!
Edit: and a buddy for your crab...they enjoy having a species buddy. Which then you will need a few more shells. (3-5 shells per crab).

Re: Upgrading Tank
Second hand tanks really do save, or even if you wait for those $1 per gallon sale that sometimes in on. Regardless, the tank will be an easy investment if you shop around. At most, all you need to buy is more substrate, and if your setup isn't up to par - not proper water dishes, using the wrong type of salt, no climbing/hiding places - you may need to go out and purchase those, and most of these can be done cheapy by using products around the home - except for salt, this product is something that you can skip on.
