Confused about Kendall

I just rescued a crab from a neighbor. She came in a kritter keeper, painted shell, etc but is much happier now and has already changed shells!
She is not currently with the M's, but I plan to combine them today or tomorrow.
One of her back legs is missing, but she gets around just fine.
The food we were given with her was the ZooMed pellets which do contain copper sulfate. I threw it out, but should I be worried about the long-term effects on her health?
I know I should assume that she is a PP, but would like some reassurance that she isn't a Strawberry.
I would describe Kendall's coloring as raspberry chestnut.
She is quite large, although it is hard to get a measurement on her because the shell she chose (about a 1 3/8" opening) looks big on her. She won't go in to let me measure her shell, and legspan probably isn't an accurate measurement because of her missing leg (although the one I got was at least 3 inches).
She is very active, almost constantly.
Her legs are hairy, and she basically lives in the water pool (I forgot to label them, but I think it's salt?). Could she have increased need/desire for salt because she lacked it in her previous home?
