How can I tell how much weight a table / piece of furniture can reasonably be expected to bear?

I'm assuming you are asking if your stand will hold a tank. Need more info on order to attempt to reply. I know when I was looking at furniture as a stand, the box/directions stated how much weight it could bear.

If you're buying something premade it should have the weight specs on it.

Aquarium stands in particular are good at holding weight because they're designed to hold the water weight.
