The Hikari freeze-dried foods that are just an ingredient and a couple of vitamins are definitely safe and a great source of protein. (Bloodworms, krill, brine shrimp, etc.) The regular fish foods (flakes, pellets) have a lot of junk in them and shouldn't be used as a standard diet. My hermits wouldn't even touch the crab food they make. (Offered it as a treat.)
They should be able to eat the brine shrimp eggs, but check to make sure there isn't a lot of salt or preservatives!

Cooked chicken no seasoning, hard boiled eggs, organically grown foods and baby foods, organic peanut butter, nuts no salts, fruits insides only no seeds no skin, baked squash, dried maple leaves..dandelions the whole thing. Just to name some things..there is a whole list on the land hermit crabs section to..I haven't bought store commercial crab food in years! I also give them some cockateil food..it's seeds, millet, dried veggies,..they love it!
