I’ve have been using 2.5 gallons with ramps as water sources for 4 months now. Only 1 of my crabs used these ramps. I recently added a piece of driftwood that lays over each tank and reaches into each tank. I haven’t seen the crabs enter the water that way, but they hang out on the top part a lot.
The question is can I remove the the ramp and add wood/rock/plants instead for them to enter/exit the pools?
The ramp takes up a lot of room and they don’t use it often enough.

as long as the crabs can get in and out without anything falling over and preventing them from getting out you should be okay

I’m just concerned that if I take the ramp out they’ll get stuck and can’t get out. I don’t want to risk it, but I can’t really experiment with much until the ramps are out.

Deep water is a tough call and changing things up. I siliconed stones to the rear of my pools to allow access along with my ramps.
To be cautious you can keep the items as tank decor to see how the crabs climb on them. Once you know they use them you can rinse the sand off and add them to your pools. If there is a way in and out the crabs will find it.
Crabs can stay submerged for a few hours without air. I would assume if a healthy crab became trapped in a pool you would have several hours to rescue it.
