What's going on with my red claw crab?

I came home from school a few days ago and she was sitting in her bowl of brackish water with food in her mouth and she turned this white color

What is the ammonia, pH, nitrate and nitrite level of the water she's in? These guys breathe water so you have to know what it's composition is or they end up poisoning themselves with their own wastes extremely quickly. (Sometimes in as little as a few hours if things aren't set up right.)
