My crab is pooping in his water dish!

Yes, they don't care where it goes. Just like birds, they go when & where they go, so if it happens to be while they check out the fresh carrots...eh, so be it. I don't know if they ever eat their own waste, but they will snack on the waste of other animals. Such is the life of a scavenger. So, while I would probably do the same and provide fresh carrots, free of hermit poo, it doesn't seem to be a big deal to them.
