Ok I don’t keep them and don’t know a lot of this stuff but fortunately there is some stuff I can answer from lurking on here!!
The roley poleys will clean the tank for you! The substrate will generally not need any cleaning from you if you spot clean and the isopods spot clean enough.
They don’t bother the hermies! The hermies can even eat them if they’re fast enough to catch one hehe
Catching them does seem to be potentially dangerous but idk much about that. Personally, I’d much rather be safe than sorry.
To reduce breeding you can reduce food so there are less leftovers for them to eat (obviously don’t starve the crabs but just minimize leftovers). You can even sell if interested

(Edit: I just remembered also having two diff isopod types would mean that each keeps the other from overbreeding through competition)
